Crunchy Granola

If you're looking for a tasty and healthy breakfast to fuel your mornings, look no further than this crunchy protein-packed granola. Quick to make in advance and easy to prepare each morning. Simply add yoghurt, milk or whatever you prefer, then add a generous topping of colourful berries and fruit.

SERVES 2
Ingredients
1/2 cup (135g) rolled oats
2/3 cup (80g) chopped pecans/walnuts /almonds (your choice) 1 cup (120g) ground almonds (almond meal) 1/2 cup (80g) pumpkin seeds 1/2 cup (80g) sunflower seeds 1/2 cup (40g) shredded coconut 1 tsp ground cinnamon 1/4 cup (80ml) pure maple syrup 1/4 cup (60ml) extra virgin olive oil 2 tsp vanilla extract
Method
1. Preheat oven to 180°C
2. Place oats, nuts, ground almonds, pumpkin seeds, sunflower seeds, coconut & cinnamon in a large bowl & mix.
3. Add maple syrup, oil & vanilla extract and mix gently to coat. 4. Spread out on a large, lined baking tray and bakeuntil golden brown & crunchy.
5. Stir every 10 minutes.
Allow to cool completely before storing in an airtight container.
